Title: Sweet and Sour Vidalia Onions

Yield: 6 Servings

1 1/2cOnions (Vidalia, Texas 1015,
  . or Walla Walla), sliced
3cCucumbers, peeled, seeded,
  . thinly sliced
1/2cCarrots, grated
1/2cWhite wine vinegar
1/4cSugar
2tbFresh dill, minced
1/2tsSalt
1/4tsBlack pepper

Toss onions, cucumbers and carrots together in a bowl.

Combine remaining ingredients and pour over vegetables. Toss to coat.

Refrigerate for at least two hours before serving.
